Easy Paleo Breakfast

Our easy Paleo breakfast is a classic recipe filled with plenty of animal protein and healthy fats. While this recipe is written for two pasture-raised eggs and two slices of bacon per person, you could easily add more of each. Simply add on extra eggs or bacon to your Carb Manager Daily log. I love how this recipe is filling and keeps you satisfied until lunchtime. The eggs and bacon are paired with deliciously ripe and juicy red raspberries, which are perfectly low in their glycemic index but have some carbs to keep you going. Be sure to source uncured and even pasture-raised bacon and eggs for this recipe, as they are higher in Vitamin D, choline, and Vitamin A.

Why is the bacon fat not added to the ingredient list?

We did not add the bacon fat directly to the ingredient list because it is already accounted for in the “raw bacon.” The fat that renders from the bacon on the sheet tray is poured directly into the skillet before frying the eggs. Not only is it convenient but very tasty.

What are the best eggs to use?

The best eggs to eat are pasture-raised eggs if you can afford them. They are full of Vitamin D (sometimes up to 1400 IU per yolk), B2, B12, selenium, and iodine. They also contain more Vitamin A and folate than conventionally raised eggs, so we recommend them if you can afford them.

Can I use this for meal prepping?

Yes! Bacon reheats well in the microwave. So feel free to cook the bacon ahead of time, store them in the fridge, then microwave them on a paper towel-lined plate in several 30-second increments, flipping once or twice until crispy.

  • Step 1

    Preheat the oven to 400 F (210 C). Cook for 12-13 minutes, then flip the bacon and cook for another 12-13 minutes or until crispy. Feel free to flip it again before the timer is up if it starts to brown well on top. If the bacon is browning too quickly, turn the temperature down to 375 F (190 C). Remove the bacon from the oven and allow it to cool slightly before removing it from the tray and placing them on a paper towel-lined baking sheet.

    Heat a 12” a nonstick pan over medium-high heat until hot. Drain about 2-3 tbsp of the bacon fat into the pan. I like to use a 12” blue steel pan. Crack in eight large eggs.

    Allow the eggs to cook for 30 seconds or so, then turn the heat down to medium-low. Cook the eggs how you would like them. For this recipe, we cooked them over medium.

    Once the whites start to turn opaque, you can cook each egg in the pan differently depending on the preference of the people you are cooking for (fried, sunny side up, etc.). Serve two pieces of bacon and eggs on each plate. Combine the raspberries and blueberries together. Enjoy 3/4 cup of berries per serving.
