This Keto Fall Apart Pork Shoulder with Garlic Mustard Rub is a simple recipe that is easy to make, especially if you plan to be home for an extended time. Our pork shoulder cooks low and slow in the oven for the perfectly tender, succulent roast! Granulated garlic, kosher salt, mustard powder, and Italian seasoning are mixed to create an excellent rub for the outside of the pork shoulder. The shoulder is cooked at 300 F for several hours to ensure a tender roast. We love this recipe because it is the best base to put into other recipes to make them high in protein.
How can I adjust this recipe for different sizes of pork shoulder?
You can keep the oven temperature the same but shorten or lengthen the cooking time depending on the size of the roast. All you need to look for is tender meat falling off the bone. For larger roasts, you could cook it for up to eight hours. Be sure to keep the roast covered most of the time to prevent drying. During the last couple of hours, take the parchment paper/foil off to allow the roast to brown.
What is the best pork to use for this?
We like to source pasture-raised pork as the fat tends to be higher in Vitamin D and other fat-soluble vitamins. However, buy the best pork you can afford, so feel free to substitute using conventionally-raised pork.

Step 1
Preheat an oven to 300 F (150 C). Dry the pork shoulder all around with paper towels. Discard the wet paper towels. Then mix the granulated garlic, mustard powder, kosher salt, and Italian seasoning.Step 2
Sprinkle the mixture over the pork on all sides. Cover the pork with parchment paper and then a layer of tinfoil to prevent the meat from drying. Cook the pork in the oven for 5-6 hours or until the pork falls off the bone.Step 3
Remove the parchment paper/tin foil during the last couple of hours to allow the pork to brown. Serve the pork immediately!
