Chicken thigh, skin removed before cooking
6 medium
Salt
0.25 tsp
Black pepper
0.25 tsp
Garlic
2 clove
Sun dried tomatoes
0.33 cup, whole pieces
Chicken broth

Lemon juice

Step 1
Turn on your slow cooker. Add the chicken thighs to the pot and season with ¼ tsp salt and black pepper. Mince the garlic cloves and add them to the chicken.Step 2
Add the chicken stock, sundried tomatoes, and lemon juice. Set the timer for 4 hours on high or 6 hours on low. Put the lid on the crockpot and let the chicken cook.Step 3
Once the timer goes off, add the spinach and put the lid back on for 10-15 minutes. When the spinach wilts, add the cream and parmesan cheese. Stir carefully to combine, making sure not to break the chicken.Step 4
To serve, place each chicken thigh on a plate. Divide the spinach, sundried tomatoes, and cream sauce over the chicken. Serve immediately.
