Almond Flour Finely Sifted by Blue Diamond

Flaxseed Meal by Bob's Red Mill

Step 1
Preheat your oven to 350 F (180 C). Line an oven-safe baking dish with parchment paper and set that aside. Melt the butter in a large microwave-safe bowl.Step 2
Add the almond flour, flaxseed meal, baking soda, baking powder, salt, thyme, and garlic powder together in a separate bowl. You can also sift the ingredients together. Then, mix the dry ingredients into the melted butter.Step 3
Finally, whisk the eggs together in a clean bowl. Then, add them to the batter. Once well mixed, fold the lemon juice into the batter.Step 4
Divide the batter into how many servings you’re making. Use a spoon to scoop the batter into domes the size of an English muffin. Make sure to leave some space in between the domes.Step 5
Bake the English muffins for about 20 minutes, or until the tops of the rolls begin to brown slightly. Allow them to cool for 5-10 minutes before slicing. Top with butter or use the English muffins as a sandwich roll/bun!

Haven’t made yet but plan to do so. I’m sure I’ll be a fan. Will try lupin flour (1 carb per .25 cup); need to get some dark flax seeds — had some previously which were zero carbs — the light colored flax seeds are more carb expensive. Will also try separating white as nd shipping separately — I’m assuming fold them in to extent possible. I recently got some mascarpone cheese that was zero carbs — think I’ll try that as a topping. Will share back on the lupin flour. 🙏😎🖖

Used sunflower seed flour (because I was out of almond flour) and it turned out great. Whipping egg whites separately helps with leavening. Melted a cube of cheddar and spread it on top.

I love these! I make a double batch - NO SEASONINGS - then I put 1/2 the batch into ring molds for plain muffins. Next, I add Swerve, cinnamon, and an extract (vanilla or maple or banana) to remaining dough before dropping it on the cookie sheet too. Bake them all up! House smells divine and these are moist and amazing.

Fabulous result from following the recipe other than substiting fresh herbs for dried including garlic chives instead of garlic powder. Soft consistency with a nice crunch.

My mix was sloppy but they taste great, I omitted the lemon juice (I’m not a fan), they were soft and buttery first bread like thing I’ve had in over 3 months and enjoyed two with Philly cheese. I will def make again but will try adding the egg whites separately as suggested in posts below.

I made these in muffin tins just to try them out. Made six instead of five, but after trying them and a touch of garlic powder and Italian seasoning, no lemon juice and I will make again, according to instructions though. Make a great breakfast sandwich.

Just what I need when I'm craving bread or a bit of toast. I found these really filling and very tasty, I'm usually looking for something else to eat mid morning but these have really helped quash that. I have them with eggs in the morning or topped with cheese for lunch. Will definitely be making them again and adding them to my favourites. Thanks for the recipe!

These were so buttery and flakey! Perfect for an egg muffin sandwich. Mine yelded 4 instead of 5. Next time I make them, I'll roll them into balls so it's easier to cut in half a nice they are so flakey.

The closest bread texture I found in all the Keto «bread» I've tried . Definately work to replace your craving for bread, great flavor ( no egg flavor) !

I made 2 separate batches this morning. On batch #1 I used ghee butter and lime juice instead of lemon juice bc that’s what I have on hand. The batter was a little runny but seemed to tighten up as it sat. I baked for the time specified and they came out like 3 inch diameter cookies, too thin to cut in half. On the 2nd batch I used regular salted butter(not grass fed) and again, the batter was not quite as stiff as it shows in your picture but I tried to dome the batter. They came out a little thicker. Do you think it’s the lime juice? The flavor is good. I just need them to be thicker so I can cut them in half

Glad you enjoyed the flavor! This recipe was tested with lemon juice only, but is it possible your baking powder or baking soda need replacement? Older baking powder can lead to baked goods not rising properly. Alternatively, you could try separating the eggs and whipping the whites prior to folding them into the batter.

Delicious. I followed what Tracy suggested. Whipped egg whites and added 1/2 tsp. Seltzer used 5 tbls. Flax seed meal and 11 tbls. Almond flour. Came out good. Very tasty and not dry at all. Also, added the egg yolks to mixture. I used a ice cream scoop and got 5 Nice size. My husband even loved them.

These were good but next time I am going to leave the spices out. Maybe try Cinnamon and a little Swerve for a sweeter breakfast muffin.
