These Keto soul food collard greens are our quick and easy take on this classic southern side. The mix of tender greens and salty bacon is a crowd pleasing combination the whole family will enjoy. Perfect served with our Keto fried chicken or Cajun pork chops.
How to Make Keto Southern Style Greens
Southern collard greens are typically slow cooked with ham until wilted and tender. For a quick and easy alternative, we have simmered our Keto collard greens with bacon, onion and garlic in chicken stock. Not forgetting a generous tablespoon of butter for those all important Keto fats.

These Keto soul food greens are a great accompaniment to a southern inspired meal. Perfect with Keto chicken or pork recipes and a side of low carb biscuits. Alternatively this is simply a great side to accompany weeknight dinners.

Ingredients
Collard Greens
5 cup
Bacon
4 slice - 6" long
Garlic
1 clove
Chicken Broth, Bouillon Or Consomme, Ready-to-serve Can
1 cup
Unsalted Butter
1 tablespoon
White Onion

Step 1
Melt the unsalted butter in a large skillet over a medium heat. Thinly slice the onion and roughly dice the bacon. Add the onion and the bacon to the skillet with the melted butter. Pan fry for a few minutes to brown the bacon all over and soften the onion.Step 2
Thinly slice the garlic. Add the garlic to the skillet along with the onion and bacon. Stir well to combine. Cook for a few minutes more until the garlic is soft and fragrant and the bacon is golden and starting to crisp.Step 3
Slice the collard greens into half inch ribbons, discarding any tough stalks. Add the collard ribbons to the skillet. Add the chicken stock and stir well to combine. You may wish to season with salt and pepper at this point, depending on the strength of your stock seasoning. Bring to a gentle boil, then reduce to a simmer until the greens are tender and all the stock has evaporated - about 15/20 minutes. Serve hot.

I love this easy recipe. It’s not so different than how I made it already without the butter, which was an easy add. I also added a few cubes of leftover ham from Easter but unfortunately had to resist making the normal corn muffins. A few dots of hot sauce and this was great as my main meal.

I'm making this right now. I have "added" a few things like unsalted chicken broth and bone broth to help strengthen the value of the pot liquor. I also have a hambone which I had in the freezer. I'm just letting it go for hours and I know I will love it! The "broth" is amazing. Thanks for reminding me of my mom & dad with this recipe.

We both loved this! I would cut the bacon in half and do not add salt even if you are using low sodium chicken broth. It was a little salty for our taste but the flavor is amazing! I also used turnip greens because they have lower carbs than collards!
