Best Keto Beef Koftas
Finding Keto-friendly Middle Eastern food actually isn’t as tricky as it might first appear. A lot of Middle Eastern dishes are very healthy, and Carb Manager does the extra work for you. A few alterations to the fat percentage of your protein and a high-fat dipping sauce make these Keto beef koftas the best dish you’ll have all week. Plus, these koftas are great for meal prepping! Each skewered kofta comes with a spoonful of tzatziki-style dipping sauce. Lots of lemon juice and freshly grated cucumber make the sauce extra refreshing and the perfect contrast to the plethora of spices in the kofta. You can keep your meal light by using lettuce wraps with the kofta, or you can choose another Carb Manager recipe to make pita bread, wraps, or tortilla to eat alongside the meal. Follow the directions to learn how to make kofta on your stovetop, or read further below to learn how to cook the koftas on your grill.
Grilling the Keto kofta
If you’d like to grill your koftas instead of cooking them on a stove, make sure your skewers have soaked overnight before you assemble them. Heat your grill to at least 400 F (200 C) before you cook the koftas. It should take approximately 10 minutes of cooking for the koftas to be completed. The koftas will need to rest for about 5 minutes before eating them.
What exactly is kofta?
In a weird way, you could call kofta the “meatloaf” of the Eastern world. Koftas can consist of beef, lamb, pork, or even chicken. Everyone has their own personal blend of spices or special ingredients to make their dish unique. These beef koftas have a Levantine influence from Turkey and Greece.

Step 1
Grab slices of Keto bread and toast them just like you would a piece of toast at breakfast. Let the toasted Keto bread cool before you cut the crispy slices into small diced pieces. Make sure the bread cubes are really fine before you add them to a large mixing bowl along with the ground beef, salt, pepper, garlic powder, onion powder, parsley, allspice, red pepper flakes, paprika, and cardamom. Now, use your hands to mix everything together, making sure to massage the meat and bread cubes, until a soft and spongy kofta mixture comes together.Step 2
Leave the bowl of kofta mixture aside to give the bread time to absorb some moisture and for the meat to rest - at least 10 minutes. While that’s set aside, you can make the tzatziki sauce. Stir greek yogurt, tahini, lemon juice, salt, and garlic powder together in a bowl until a smooth, off-white sauce comes together. Next, use a cheese grater to grate whole seedless cucumber into fine shreds until you reach the weight listed in the ingredients. Stir the cucumber into the sauce.Step 3
To make the beef kofta, start heating a large skillet or grilling pan over high heat on your stove. Here, a cast-iron griddle was used to grill the koftas. Divide the meat mixture into your servings before rolling each portion into a ball. Then, push a skewer into a “meatball” as you press the meat into an oblong and flattened kofta. Repeat the process until all the koftas are formed on skewers.Step 4
Lay each kofta down in the hot skillet, and cook them on one side for approximately 4-5 minutes before flipping them over with a pair of tongs. Cook the koftas for an additional 3-5 minutes, adjusting the heat to a lower setting to avoid burning. Let all cooked koftas rest a few minutes before serving with the cool tzatziki sauce. You can eat the koftas with lettuce wraps or another favorite Carb Manager Keto wrap, pita, or tortilla.
