  • Step 1

    Heat one tablespoon of olive oil in a frying pan over a high heat. Season the sardines with black pepper and add to the pan skin side down. Cook for 3-4 minutes until golden. Flip the fillets and cook the other side for a further minute or two until the fish is cooked through. Remove from the pan and set aside.

    Whilst the sardines are cooking, roughly chop the capers and tomatoes and mince the garlic. Once the sardines are removed from the pan, add the remaining olive oil over a low/medium heat. Add the garlic, tomatoes, capers and lemon zest, stirring well to combine. Sweat gently until tender and fragrant.

    To serve, top the cooked sardines with the tomato and caper mixture and scatter with chopped fresh parsley.

    I would eat them in a box, I would eat them with a fox! This was my first ever try at sardines and I love this recipe so much! I will be making this again really soon. It took less than 10 minutes from opening the can to sitting down to eat, too. Wow! ❤️ Very flavorful, perfect chorus of ingredients, and just right with a basic green salad in the side.
