Can I Use A Different Cheese?

If you would like to use an alternative cheese, you could swap the goat cheese for creamy mozzarella pearls or some crumbled feta cheese. These would both be delicious substitutions.     Thinly slice the beefsteak tomato and the cherry tomatoes. Arrange the arugula across a large serving plate. Layer the tomatoes over the arugula, mixing the different types of tomato. Slice the olives in half and scatter over the tomatoes.
