These 5 ingredient Keto Waffles are deliciously reminiscent of banana bread! Fresh eggs, ripe banana, almond flour, coconut flour, and baking powder combined to make the batter. Each waffle is cooked until golden brown and delicious. We like to mash the banana most of the way, but not all the way, so small bites of banana are in the final cooked waffle. You can top these waffles with softened butter, Keto maple syrup, and a light dusting of powdered sweetener before serving. They are also delicious plain!

Most fruit is acceptable on a Keto diet as long as it fits your macros and carb limit.

How can I save leftover waffles?

The waffles hold up wonderfully to being frozen. Simply place them into a freezer zip lock bag and then into the freezer. Once ready to reheat, put them in a toaster on a defrost setting to crisp them.

What if I can’t have almond flour?

If you can’t have almond flour, you can add an additional 2 1/2 tablespoons of coconut flour.

  • Step 1

    To begin, plug in a mini waffle iron and allow it to come up to temperature while you prepare the waffle batter.

    Mash a ripe banana into the eggs. It is ok if it is not perfectly smooth; this results in a final waffle with some delicious banana pieces.

    Combine the dry ingredients, including both flours and baking powder.

    Whisk the dry ingredients into the liquid ingredients.

    Pour just enough batter to cover the bottom of the waffle iron barely.

    Cook the waffles for 5-6 minutes each. They should be golden brown and delicious and remove easily from the waffle iron.

    Repeat the process with the remaining batter. Feel free to top the finished waffles with softened butter and Keto maple syrup or real maple syrup if you follow a Paleo diet.

        I loved my breakfast today! I reduced the recipe making 4 waffles. I will freeze the other 3. Enjoyed one waffle with 2 slices of bacon and warm butter. For this deliciousness I don’t mind the 5 carb count.

          I know banana's aren't at all KETO, but ladies and gents... what could we swap the banana out for?? Pumpkin? blueberry? I'm up for testing... anyone have ideas?

            I wouldn't use bananas either, way too many carbs, but I have used Banana Emulsion by Olive nation that I bought on Amazon for other recipes, I'm sure that would work, might have to change the rest of the ingredients to make up the missing banana though, maybe more flour

          Banana is not keto. I calculated 6.56 g net carbs per serving and the serving size is very very small. I don't think one mini waffle is a reasonable serving size. Perhaps if you are just craving one and want a bite then it may be good.

              The carb count on this is wrong. 3 ounces of banana is 19 carbs. Bananas are not keto.
