  • Zucchini

  • Black Pepper, Ground

  • Parmesan Cheese

    Parmesan Cheese

    ½ cup, shredded

  • Step 1

    Preheat an oven to 375 degrees. Line a large sheet tray with parchment paper. Slice cleaned zucchini into ½-inch thick rounds. You should get approx. 30-35 pieces. Lay the rounds across your sheet tray, and sprinkle the salt and pepper over the tops.

    Sprinkle the parmesan cheese evenly over the tops of each zucchini puck.

    Bake the zucchini pucks 30 minutes or until the cheese is golden brown and the zucchini is al dente.

      Would these keep well in the fridge? As in would it work to make a bunch at night and then put in the fridge so they could be taken to work for lunch the next day?

              Excellent but not sure if recipe accurate cutting zucchini in 1/2 inch thick pieces to get 35 out of the same weight zucchini they said ??? I didn’t get 35

                I think they mean 30-35 per sheet, not per zucchini.

                    This turned out to be surprisingly delicious, and so simple to make. Nobody in our family likes zucchini but I decided to try this recipe anyway. I had to disappoint them by telling them they could not have more than 5 pucks per person!
