Keto Avocado Boats with Strawberries and Goats Cheese

Ingredients
Balsamic Vinegar
2 teaspoon
Strawberries
2 small - 1" diameter
Maple Flavored Syrup by Lakanto
2 teaspoon
Olive Oil
2 teaspoon
Goat Cheese, Soft
1-½ tablespoon
Avocado
1 each
Walnuts
1 tablespoon, chopped
Black Pepper
⅛ teaspoon

Step 1
Add the walnuts to a dry skillet over a low/medium heat. Toast gently for a minute or two until lightly golden.Step 2
Slice the avocado in half and remove the stone.Step 3
Crumble over the goats cheese. Thinly slice the strawberries and arrange on the avocado halves in amongst the cheese. Season with a little black pepper.Step 4
Scatter the walnut pieces over the avocado boats.Step 5
Whisk together the oil, syrup and vinegar. Drizzle over the avocado boats to serve.

Delicious! What a unique and tasty side dish. It was difficult eating only one. Easy, minimal ingredients, attractive and yummy!
