Ingredients
Arugula
2 cup
Hard Boiled Egg
2 medium
Mayonnaise, Store Bought
1-½ tablespoon
Cauliflower Rice
1 cup
Cucumber, Raw, Without Peel
½ cup
Yellow Bell Peppers, Raw
½ small
Red Bell Peppers, Raw
½ small
Lemon Juice
½ tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Add the cauliflower rice to a small pan over a low/medium heat. Add two tablespoons of water and bring to a simmer, cooking gently for 3-4 minutes until the cauliflower is tender and the water has been absorbed.Step 2
Finely dice the bell peppers and cucumber and add to a large serving bowl along with the cauliflower rice and arugula. Season to taste and toss to combine.Step 3
Slice the hard boiled eggs and arrange in amongst the salad.Step 4
Mix together the lemon juice and mayonnaise until smooth.Step 5
Drizzle the lemon mayo over the salad to serve.
