Keto Air Fryer Chicken Chimichanga
Our Keto air fryer chimichanga is made with a delicious chicken filling and a tomato-based sauce. The chicken is simmered for under an hour to make the meat nice and tender. The meat is shredded and then spiced with chili powder, ground cumin, coriander, and paprika. The spices are common pantry staples, so you will likely have most of them on hand. The filling is placed into a Keto tortilla wrapped tightly and then placed in a preheated air fryer. The chimichangas are cooked until crisp and golden brown on the outside. You will love how easy these are to make!
Do I have to use wheat-based tortillas?
No, while wheat and gluten are prohibited in some Keto circles, it is ok occasionally as a treat if gluten is not an issue for you. We used wheat-based tortillas because it browns and crisps the best in the air fryer. It is also stretchy and flexible, holding the filling well without leaking. Feel free to use an almond flour-based tortilla just be aware that some have a higher carb count. Be sure to find tortillas made with olive oil versus soybean oil or canola oil.
Can you freeze Keto chimichangas?
If using wheat-based tortillas, these chimichangas freeze very well. When you are ready to consume one, remove it from the freezer and microwave it until halfway heated. Then place it back into the air fryer at 400 F to crisp up and cook it all the way through.
What can I substitute for the avocado oil if I do not have any?
You can substitute the avocado oil for any Keto-friendly fat like tallow, lard, duck fat, or coconut oil.

Step 1
Place the raw chicken thighs in a pot of water. Bring the water to a boil, turning the heat down to allow the water to simmer. Add the bay leaf. Cook the chicken thighs for about 45 minutes until they are very tender and easy to shred.Step 2
Drain all the water off the chicken thighs, but leave about ½ cup at the bottom of the pan. Shred the chicken into smaller pieces.Step 3
Next, you will want to add the tomato sauce, chili powder, ground cumin, coriander powder, and paprika to the chicken. Cook the chicken until the spices and tomato sauce have glazed the meat, about 10-15 minutes on medium heat, allowing the mixture to simmer.Step 4
Place one tortilla down on a plate and fill with the chicken mixture. Top with two tablespoons of shredded Mexican cheese. Fold in the sides and then roll the tortilla into a tight roll. Repeat with remaining filling and tortillas. You should be able to make about 5 tortillas.Step 5
Add the avocado oil to the air fryer. Preheat avocado oil for 3 minutes at 375 F. Then place two chimichangas into the air fryer at 400 F for 15 minutes for the first side.Step 6
Flip and cook for another 10 minutes until the chimichanga is cooked and crispy on the outside. Repeat with the remaining chimichangas. Set aside the hot chimichangas on a plate.Step 7
Drizzle with hot sauce and top with sliced cherry tomatoes and more shredded cheese, as desired. Serve with sour cream on the side. Feel free to serve with guacamole as well.

Frustrating that the tortilla size is not listed. So what is the real carb count?!!!!! I purchased the app so I would have good recipes to explore, but many recipes seem incomplete and not fixed?

The recipe calls for tortillas but doesn't include them in the ingredients or nutrition info.
