These amazing Keto oatmeal cookies don’t actually have a single oat in them! These super low-carb cookies come out of the oven warm and smelling like cinnamon. Just like a proper oatmeal cookie, the edges are golden and slightly firm while the centers are soft and chewy to bite into. The cookie dough is flavored with honey, Keto brown sugar, and a little bit of dried coconut. Store the finished cookies in a sealed Ziploc bag on your countertop for up to three days. Just like regular cookies, you can throw one in your meal prep container with lunch or grab one in the middle of the night as a snack while nobody is looking. I Don’t Own A Stand Mixer

For an easy Keto cookie recipe, you don’t need to own a stand mixer to accomplish it. However, in this recipe, expect to roll up your sleeves and use a little elbow grease to mix the cookie dough in a regular mixing bowl. Almond butter can be very sticky and stiff to work with. You can also use a hand blender or a food processor to mix your cookie dough too.

    Combine sliced almonds and unsweetened coconut flakes in a bowl, and use your hand to crush the ingredients into small pieces. Crush them until the pieces of almonds and coconut are the size of oat flakes. Then, add almond flour, baking soda, salt, and cinnamon to the bowl. Stir the ingredients to combine them, and set the bowl aside.

    In a stand mixer, blend almond butter with honey, vanilla extract, brown sugar substitute, and egg with a paddle attachment. Next, melt the butter and mix it into the almond butter along with liquid stevia. Once the ingredients are blended into a loose, creamy mixture, add the dry ingredients to the wet. Blend the cookie dough together until a firm and slightly sticky dough forms. Turn on an oven to preheat to 350 degrees and line a sheet tray with parchment paper.

    Scoop the dough into 2-tablespoon portions and transfer them to the parchment paper. Gently press each portion of cookie dough about halfway down. Bake the tray of cookies for just 10 minutes before checking for doneness. The cookies will be golden all over with darker bottoms and a slightly soft center. Let the cookies cool for 20 minutes before eating.

    I wanted to make these cuz i was craving oatmeal cookies but i was out of almost all the ingredients. So i improvised i didn’t have the nuts or almond flour or the coconut or the nut butter. so i just used an egg n oatmeal n baking soda, sea salt, stevia n i put in 3 gooey figs and a teaspoon butter n tad honey n barely any vanilla cuz i ran out of that too ( ugh lol) all in the processor and it tastes like fig newton cookie. My husband loved it. Fig Newtons are one of his favorites.. My problem is that I don’t know what the carbs n calories are but need to figure it out. i only ate a Tablespoon and not sure how many servings it makes. i didn’t measure anything but just eyeballed it. I think It was probably about 1.5 C oatmeal. I will be shopping today. LOL
