This decadent treat combines all the components of a s’more in a mug cake. It consists of a delicious vanilla cake, a toasted cinnamon crumb, toasted marshmallows, and some sugar-free dark chocolate. You can prepare it in less than 5 minutes using common baking ingredients.

We might be skimping on prep and cook time in this mug cake, but we never let it affect the quality and flavor of this treat. This mug cake is super moist, thanks to the cream cheese in the batter, which keeps it soft after cooking. You can substitute the cream cheese with sour cream, but make sure not to skip it. An essential factor in this recipe is to use it at room temperature; otherwise, you’ll end up with a lumpy batter. You also shouldn’t overcook the cake, so stay next to the microwave and check on it every 15 seconds after it reaches the one-minute mark.
What type of marshmallow can you use for this recipe?
Any Keto-friendly marshmallows will work in this recipe. You can find plenty of sugar-free options in the market or make your own from scratch. However, not all marshmallows can be toasted since not all sweeteners caramelize at high temperatures. Choose a brand prepared with allulose, erythritol, monk-fruit & allulose blend, or Swerve. You can use our recipe for Keto marshmallows to avoid any unnecessary additives and preservatives, but keep in mind that these marshmallows won’t get that golden color since they’re prepared with xylitol.
Can you toast the frosting without a torch?
Absolutely! If you don’t have a kitchen torch, you can use your oven broiler to toast this mug cake. Add the marshmallows to the mug cake and set the broiler to high. Place the mug in the oven, and let the marshmallows toast for 1-2 minutes, checking on them every 30 seconds.

Step 1
Add the butter to a small pan and melt it over medium-low heat. Add 2 tbsp of almond flour and stir until toasted. Take it off the heat and add the powdered erythritol and cinnamon. Set the crumb aside.Step 2
To a mug, add the room temperature cream cheese and oil. Whisk until smooth. Add the egg, almond milk, and vanilla extract and whisk until smooth.Step 3
Add 5 tbsp of almond flour, granulated erythritol, baking powder, and a dash of salt. Stir until a batter forms. Stir in most of the crumb, reserving 1 tsp for the topping.Step 4
Microwave for 60 seconds, or until cooked all the way through. Add the marshmallows and toast them using a kitchen torch. If you don’t have a torch, you can broil it in the oven.Step 5
Top with the chocolate pieces and let them melt from the residual heat. Top with the remaining crumb. Serve immediately
