Low Carb Baja Shrimp Burrito
Jumbo shrimp is seasoned and cooked in Keto-friendly olive oil and served with a quick-scratch coleslaw made with lettuce instead of cabbage. You’ll also make a delicious homemade guacamole. All of these items go inside a low-carb tortilla to make a Keto shrimp burrito. You can either find special low-carb tortillas in grocery stores or you can make your own. If you like, you can add more ingredients to your burrito, but try not to overstuff your tortilla. You can also choose one of Carb Manager’s side dish recipes to fill out your meal.
What is a Keto tortilla?
Since the Keto diet and low carb diets have become so popular, you may find Keto tortillas already made and packaged in stores. Some brands may say “Keto” right on the packaging but check the nutrition labels. Most Keto tortillas will have about 5g-7g net carbs per serving. If you can’t find Keto tortillas in stores, why not try one of our Carb Manager tortilla recipes.
Other ingredients to put in a Keto burrito
Don’t forgo the recipe if you don’t like what’s inside! Other Keto ingredients that are perfect for burrito fillings might be pickled jalapenos or onions, salsa, or sour cream. You can always swap out the guacamole for fresh-sliced avocado as well.
Can I meal prep this recipe?
Don’t meal prep the entire burrito because your ingredients may get soggy. What you can do is prepare the shrimp in advance for a quick lunch. Then, just assemble the burrito without any cooking during the week. You can also bring the separate components in Tupperware to work. Try swapping out the tortilla for cauliflower rice and make a burrito bowl instead!

Step 1
Combine shredded lettuce, mayonnaise, lemon juice, salt, pepper, and celery seed together in a dish. Set the mixture aside in your refrigerator to marinate for just 10 minutes. Since you’re not using cabbage, you don’t need to marinate it for very long.Step 2
Peel and devein jumbo shrimp, then season the shrimp with olive oil, salt, pepper, lemon pepper, onion powder, and garlic powder. Heat a pan on medium heat until hot, then add the shrimp. Cook the shrimp on both sides for 2-3 minutes or until golden. Pour the second amount of lemon juice over the shrimp when you flip them over to steam them.Step 3
Make quick guacamole by mashing avocado in a bowl. Mix the avocado with extra virgin olive oil, lime juice, and chopped green onion. Add salt to taste.Step 4
Grab a Keto tortilla to make a burrito (you can warm it up to make it easier to use). Spread the guacamole in a strip on one side of the tortilla. Arrange the creamy lettuce slaw on top of the guacamole. Finally, place the shrimp as the last layer of the burrito over the slaw and guac. Roll up the tortilla to finish the burrito.
