Low Carb Pumpkin Spice Latte
Whether it’s actually Autumn or not, you can satisfy your inner teenager with this Keto pumpkin spice latte recipe. Enjoy at breakfast or whenever you have your coffee to bring yourself some comfort. Use your favorite brand of espresso to make a classic-style latte. You’ll make your own pumpkin spice milk made with real pumpkin puree and little carbs. You can steam the milk, froth it, or chill it down to use as a cold creamer. Follow the directions to make a proper hot pumpkin spice latte or make your own combination of espresso and pumpkin milk that you enjoy. The pumpkin milk is highly flavorful but light enough that it won’t separate in your coffee over time. This is a recipe you can pour into your insulated travel mug and enjoy throughout the day.
What Makes A Latte?
A latte is just another combination of coffee and milk. In this case, a latte has a coffee to milk ratio of 1:2. Therefore, in this recipe, each latte includes approximately 4 fluid ounces of espresso and 8 fluid ounces of pumpkin milk. An additional layer of frothed pumpkin milk is included on top of the latte.
Other Types Of Coffee Drinks
If lattes aren’t your thing, you can make any other combination of espresso and pumpkin milk. A flat white has a coffee to milk ratio of 1:1. A pumpkin spice macchiato will include just 1 shot of espresso and the rest of the cup is filled with foamed pumpkin milk. You can also chill the pumpkin milk to use as a cream for iced coffees.

Step 1
Make your espresso first using your favorite brand of ground espresso. Ideally, two shots of espresso are preferred for a proper latte, but you can use more or less depending on how much caffeine you want. If you want to keep the right ratio of milk to espresso for your latte, make sure to adjust the other ingredients respectfully if you change the amount of espresso in the recipe.Step 2
Next, make the pumpkin milk. Heat almond milk, heavy cream, and canned pumpkin together until the liquid just reaches a simmer. Stir the ingredients together and add in vanilla extract, pumpkin spice, cinnamon, and liquid stevia. Adjust the pumpkin milk to your taste, but remember you want very rich flavors to flavor your coffee. Take the pumpkin milk off of the heat and use a hand immersion blender to fully blend the milk together.Step 3
To assemble the latte, pour the espresso into the bottom of a coffee cup. Pour 8-ounces of hot pumpkin milk into the cup. You should have about 4 ounces of pumpkin milk remaining, which you will need to foam with a milk frother or you can use your hand immersion blender. You can also use a bullet blender to froth your milk. Pour the warm, frothy pumpkin milk onto the top of your latte and enjoy.
