Keto Greek Salad with Fresh Thyme

This colorful Greek salad with fresh thyme is an excellent addition to your Mediterranean Keto diet. This version takes a traditional Greek salad and gives it a lovely thyme-flavored twist. The salad makes a wonderful side to various fish or meat recipes, but it can also be served as a light dinner with your favorite Keto pita bread. This is an excellent make-ahead recipe, as it tastes even better the next day. Simply store it in air-tight containers until ready to serve.

Recipe Steps

  • Step 1

    Thinly slice the peppers. Peel and slice the onion. Set aside.

    Roughly chop the cucumber. Add to a large bowl along with the onions and peppers. Cut the cheese into bite-sized chunks.

    Finely chop the thyme. Add to a bowl along with olives, capers, feta cheese, olive oil, lemon juice, salt, and pepper. Toss to combine.

    Garnish with sliced lemon and some more fresh thyme. Optionally, add some more salt or pepper to taste. Serve immediately.

      Easy and delicious, it's satisfying. This salad holds up well in the fridge. This is defiantly on my monthly menu, also great for a salad to go.
