Keto Bacon and Zucchini Strips
This side is a simple way to add fat to your meal without making the meal too rich tasting. Crispy bacon is tossed with lightly seasoned zucchini. The natural sodium from the bacon and its grease keep the side dish salty with having to add extra seasoning.

Step 1
Prepare the zucchini by cutting the ends off a large squash. Cut approx. 20 pieces about 4X1 inches. You may also pat the zucchini dry with a paper towel for easier cooking later.Step 2
Stack 5 long pieces of bacon on top of each other. Slice the bacon down lengthwise and then once across, creating 20 strips.Step 3
Heat a pan over medium heat and drop in the bacon strips. Cook to your liking, but the crispier the bacon strips, the better for this dish. You can also have a mix of crispy and less-done pieces. You may need to cook the bacon in 2 separate rounds if you do not have a large enough pan.Step 4
Transfer the bacon to the side, leaving all the grease in the pan. Turn your stove heat down to a medium-low heat and arrange your zucchini down in the hot grease. Again, you may need to do this part in 2 rounds. Sprinkle a pinch of pepper over the zucchini.Step 5
Cook the zucchini in the bacon grease for 2-3 minutes, until the zucchini is golden brown without turning to mush. Flip the zucchini over and cook the other side the same way.Step 6
Gently toss your cooked zucchini and bacon strips together before dividing in half and serving.
