You may be thinking chicken is not the same without the noodles. However, I like to put very thinly sliced cabbage on top of the soup when it is piping hot! This allows the cabbage to cook some, but to stay a bit crunchy. This gives the soup a nice texture contrast and the noodles are no longer missed! I buy angel hair cut coleslaw so I do not have to cut the cabbage myself, but you can always use a very sharp knife or mandolin to do the same thing. I like to finish the whole dish with the cabbage and then a nice bit of freshly cracked pepper on top. I also use split chicken breasts with bones attached because the bones make such a flavorful broth and it so good for you. Use 1 whole bay leaf, not chopped like the ingredients suggest.

  • Step 1

    Heat a large stockpot over medium-high heat. Add the butter and wait until it melts and turns foamy. Add largely diced celery and carrots. Saute for 3 minutes or so. Add 1 teaspoon of kosher salt.

    Add the chicken breasts to the pot along with the water. Then add a bay leaf or two if they’re small. Add the black peppercorns. Bring the soup to a boil and then down to a simmer. Let it simmer for 30 minutes.

    Remove the chicken from the pot to a cutting board to cool slightly. Then taking two forks, remove the meat from the bones and shred it into larger pieces. Add it back to the pot. Add the rest of the salt and taste the soup for seasoning. Adding more salt if necessary.

    Divide soup into bowls and top with plenty of cabbage and a good amount of freshly cracked black pepper. Serve hot!

    There is no way this is 400 calories a bowl. Just look at the ingredients

      Don’t worry about calories if you’re going Keto. Just focus on “No Carbs” and you will do great. I lost 40 pounds the first time I did this.

    I made this soup using Swanson broth and ready made chicken from Trader Joe’s which made it even easier. I added onion, garlic, red pepper flake, a dash of lemon juice and dried oregano to the celery and carrots. Then added the broth, brought it to a boil then covered and simmered for ten minutes. If using precooked chicken, add at the end and don’t simmer for over 15 mins. I added a bit of half and half (1/3 c) and garnished with fresh parsley…. It was sooo good! 😋

        you can get konjac noodles. no carbs. made from the konjac plant in japan. amazon has a great assortment. I used the fettuccine noodles for soup. you add them at the last minute.

          I used low sodium chicken stock instead of water. Substitute thin strips of low carb (net 6 for a whole wrap) tortillas for the coleslaw. Add a cup of fresh salsa for a great tortilla soup. Does add 4 carbs per serving but boy we like it.

                    I didn’t find the broth flavorful. I even boiled the chicken longer than I needed to. I used chicken with bones in and skin. The broth tasted very watered down so I added canned broth. Other than the broth, it was alright.

                      I sometimes use 8oz can of manzanita tomatoes to the soup. That gives some flavor.

                    Amazing recipe. My chicken didn’t have bones. That might take away from the nutrition but it was DELICIOUS none the less. I added some siracha hot sauce and damn! It made me love it even more.

                      I have to be on a low iodine diet so no dairy... avocado oil worked fine and Kosher salt without iodine. Put it together quickly for the Instant Pot, "Normal" soup program. The chicken was super easy to shred. I added "organic no salt seasoning" - a blend and a little more Kosher salt. The cabbage was a great addition. I almost used noodles, but glad to discover the shredded cabbage. Hubs asked for a second big bowl. Will be great for lunch tomorrow which is supposed to be cold and damp. My store doesn't sell shredded cabbage but I had some left after making Cole slaw. 👍

                          Yes, it is very finely shredded cabbage. You can actually buy it already shredded this way in most grocery stores.

                        Can you use a slow cooker for the recipe instead of stockpot? If so how long would I put the recipe in the slow cooker?? Thanks in advance
