Keto Fattoush "Bread Salad"
Fattoush is also known as “bread salad”. If you live in the United States, having croutons or toasted bread on your salad is extremely commonplace, but it’s not always so for other regions. This is why Fattoush gets its own notoriety as Keto Middle Eastern food. Traditional fattoush is made with toasted cut pieces of pita, but you’re going to have it a little easier. Instead of making your own bread, just toast some cubed Keto bread slices and season them with a special za’atar seasoning blend. A tahini and citrus salad dressing keep flavors bright and tangy. You’ll love the fresh ingredients paired with seasoned bread cubes and creamy dressing. Think of Fattoush as your new shareable dinner salad (that’s also great for lunches and meal prepping)!
What is za’atar and where do I get it?
Za’atar seasoning is a particular blend of Middle Eastern spices. The seasoning includes the actual herb za’atar as well as sumac, sesame seeds, and “other spices”. You may see this seasoning blend sprinkled on salads, sandwiches, meats, and flatbreads. First, scour your baking and spices aisle at your grocery store - some brands carry spice blends and not just individual spices. Look for international food aisles or use the internet to find za’atar.
What else can go on my salad?
Do you like cheese? Crumbled feta cheese or goat cheese is both healthy for you and still has fats for your Keto diet. Other toppings may include chopped olives, mushrooms, or peppers. A vegan-friendly way to add more protein to your salad is to include nuts and seeds. Try walnuts, cashews, or pecans on your salad.

Step 1
Toast slices of Keto bread in your preferred method to a dark golden brown. Let the toast cool briefly before you cut each slice into approximately 12 cubes. Add the cubes to a large mixing bowl and toss them with extra virgin olive oil. Then, season the bread cubes with salt, pepper, and za’atar seasoning.Step 2
Turn on your oven to preheat to 400 F (204 C) and line a baking sheet with parchment paper. Pour the seasoned bread cubes out onto the parchment, and spread them out as much as possible. Bake the toasted cubes for about 10 minutes until they’re now toasted and crunchy on all sides. Let the bread cubes cool for 5 minutes before adding them to your salad.Step 3
To make the salad dressing, whisk together tahini, lime juice, extra virgin olive oil, salt, pepper, cinnamon, allspice, and turmeric. Chop 2 ounces of lettuce per serving, and add it to a large mixing bowl. Toss the salad together with all of the salad dressing. You may also choose to dress the salad only partially and leave the remaining on the side.Step 4
Slice cucumbers and tomatoes in a style you’d prefer and add them to the salad. Follow the salad up with thin-sliced radishes before adding the toasted bread cubes. Toss all the ingredients together one final time before serving the salad while the bread is just slightly warm still. If you’re using this salad for meal prep, keep all lettuce, dressing, toppings, and bread cubes separate from each other until it’s time to eat.
