The traditional soup (more recognized as Goulash), isn’t necessarily known as “hearty”, but it does offer you a heaping bowlful of tender beef. This is one of those soups that you can leave simmering for a long time to intensify the flavors. Otherwise, you can have a big pot of Gulyas prepared in less than an hour!

  • Step 1

    To prepare the soup ingredients, dice the onions and carrots. Mince the garlic as well.

    Heat the olive oil in a large pot on medium heat. Toss in the onions, carrots, and garlic, and get them coated in the olive oil. Cook, covered, for about 5 minutes or until the ingredients are soft and the onions are slightly transparent.

    If necessary, slice the beef into bite sized pieces. Then, transfer them to the pot. Cook the meat until it’s mostly browned and cooked through - about 5 minutes.

    Stir in the paprika, salt, and pepper. Get all the ingredients thoroughly coated in the spices and let it cook for about 30 seconds.

    Pour in the beef broth. Cover the pot, bring the soup to a boil. Then, reduce the heat to a low simmer. Let the soup simmer (covered), stirring occasionally, for about 40 minutes. The liquid may reduce some. Serve hot with plenty of chopped parsley for a truly authentic flavor!

    I’ve made goulash before and this isn’t a bad recipe at all, has most of the flavor but I’d add 1tsp of smoked paprika if you want extra taste, and try to find sweet paprika instead of the regular - it really adds some depth! Also don’t be afraid of subbing with rock/ pink salt too.. The sour cream is also excellent as mentioned below 😋 and good & filling with cauliflower rice too.

      I made a little adjustment by adding only 2 tablespoons of sour cream (1.1 g carbs) to 2 servings. Turned out absolutely delicious. Thank you!
