Easy Keto Chocolate and Cashew Microwave Fudge

This easy Keto microwave fudge recipe is made with just five main ingredients and is a simple and healthy way to soothe any sweet cravings! Cashew butter forms the base of this Keto microwave recipe, giving it a lovely creamy texture. Cocoa/Cacao butter is used not only for the essential fats and the chocolate flavor it gives, but it also helps to set the fudge. Dutch process cocoa powder, vanilla extract, and sea salt are then added for flavor. At just 2g net carbs per 0.5oz serving, it really is a guilt-free treat!

What is Cocoa/cacao butter?

Cocoa butter, also known as cacao butter, is a type of natural fat extracted from the cocoa beans of the Theobroma cacao plant. Cocoa butter is pale yellow and commonly sold in solid form. It needs to be melted before cooking. It has a subtle cocoa aroma and gives a silky texture to chocolate products.

What nut butter should I use?

Use any thick nut butter of choice but ensure it has a thick consistency. Nut butter which is too runny, can make the fudge mixture too thin and prevent it from setting. Check the label when you buy nut butters! It should only contain 1-2 ingredients - nuts and salt. Many known brands often add unnecessary fillers such as palm oil or added sugars.

What sweetener should I use?

This recipe calls for powdered erythritol or any powered sweetener of choice, also known as confectioners style. The powdered form is easier to melt into the fudge mixture. If you don’t have powdered erythritol, simply add granular erythritol to a blender or food processor and pulse until powdered. Allow the dust to settle before opening the container.

Can I substitute any ingredients?

Try this recipe with peanut butter or almond butter for another recipe variation. If you have a nut allergy, try substituting with sunflower seed butter or tahini (sesame paste). How to store the microwave fudge?

Keto cashew butter fudge is best stored in an airtight container in the fridge for up to 2 weeks. You may also freeze the fudge and consume it within 2 months.     Line a small 8x8-inch baking tray or a loaf tin with baking paper and set it aside. Dice the butter into cubes. Place the butter and cacao butter into a microwave-safe bowl. Microwave for 90 seconds on high.

    Carefully remove the bowl from the microwave. Add the powdered erythritol and cocoa powder and use a whisk to stir until smooth. Add the cashew butter, vanilla extract, and sea salt and stir again to incorporate well, ensuring no lumps.

    Microwave for another 90 seconds, at 30-second bursts, to ensure it doesn't burn. The mixture will begin to bubble and resemble a chocolate mousse.
