Keto Bacon Halloumi Chive Stuffed Mushrooms

You can feed guests from out of town, friends, family, and even kids with this cheesy, crunchy, flavorful snack. Whether they’re Keto or not, anybody will like these Keto stuffed mushrooms. Brown cremini mushrooms (also called baby bellas) are stuffed with a cheesy halloumi filling. The filling also includes diced bacon and chives, plus plenty of extra virgin olive oil. You can prepare the stuffed mushrooms in advance, then just bake them when you want to serve them! The Keto stuffed mushrooms also keep well as leftovers. Reheat them in your oven or microwave.

    You’ll need to cook all the bacon until it’s crispy in a skillet first. Wait for the bacon to cool down before finely dicing it. Next, finely dice halloumi cheese as well, then add the ingredients to a mixing bowl. Douse the ingredients in extra virgin olive oil, then add garlic powder and chopped chives. Stir the ingredients together to complete the filling.

    Turn on an oven to preheat to 350 F (180 C) and line a sheet tray with aluminum foil or parchment paper. Prepare whole mushrooms by removing the stems with a spoon, then add the hollow mushroom caps to a new mixing bowl. Pour olive oil all over the mushrooms, then season them with salt and pepper. Toss the mushrooms in the bowl to coat them.

    Fill each mushroom cap densely with the bacon-halloumi filling. Arrange all filled mushrooms on the lined sheet tray. Then, bake the mushrooms for about 15 minutes. The halloumi cheese won’t melt like typical cheese, but it will become soft and gooey. The mushrooms should be tender but shouldn’t fall apart. Serve warm.
