  • Step 1

    Remove the zucchini skin and discard. Peel the flesh into wide pasta ribbons. Set aside.

    Heat the oil in a large pan over a medium/high heat and then dice the sausage into one inch pieces. Add to the pan and fry until golden brown all over and completely cooked through.

    To prepare the sauce add the stock to a small pan over a low/medium heat and then add the cream, mustard and tarragon. Stir well to combine. Bring to a boil then reduce to a simmer cooking gently until thickened and reduced.

    Once the sausages are cooked add the zucchini spaghetti to the pan with the sausages and sauté for 30 seconds to 1 minute until just tender.

    Pour the mustard cream sauce over the pasta and stir to combine. Serve immediately.

    This was quite delicious. It's the first time I've thin sliced zucchini instead of using spirals and found it to be much more believable as pasta that way. I used a mandolin to thin slice the zucchini which made it quick and easy. Instead of breakfast sausage I used bratwurst sausage (2 links which came to 7.5 ounces). I added thin sliced red onion (1 ounce) and garlic to the meat as it was finishing. To the sauce I added a teaspoon of horseradish along with the mustard and I added 1/4 teaspoon xanthan gum to thicken the sauce. Will definitely make again. My adjustments did increase the carbs to 9 per serving.

        Pretty tasty indeed. I used a mild italian sausage and doubled the mustard.... could've used even more. Regardless, a fantastic idea that we enjoyed quite a bit
