Step 1
First, combine the almond flour, psyllium husk powder, sea salt, and baking powder. You can combine all the ingredients in a small bowl and then transfer them to a coffee mug at the end. Alternatively, you can combine all the ingredients directly into a tall coffee cup (about 10-12 oz).Step 2
Add in the egg. Mix very well. The mixture will be very thick at this point.Step 3
Combine boiling water and apple cider vinegar. Add this to the mixture as well. Mix extremely well to incorporate any dry spots. The mixture should bubble quite a bit.Step 4
Add in the shredded cheese. Mix well until well combined. Alternatively, you can leave the shredded cheese on top of the dough. Feel free to substitute the shredded cheese with any variety you would like.Step 5
Cook for 1 minute and 45 seconds in the microwave. Add an extra 30 seconds if necessary. Carefully remove the mug bread from the coffee cup onto a cutting board. Allow to cool thoroughly (about 4-5 minutes). Then cut the mug bread into 3-4 slices and enjoy immediately.

I make this all the time and I love it. It’s super versatile. Make sure you use a large mug or split it into 2 smaller mugs. I have also poured this batter into a glass bread pan and then cut it into two square pieces, more like bread. I almost always microwave it for 2.5 mins. It is SUPER important to let it cool 100% or it seems soggy. Sometimes I’ll even pop it out of the mug onto a plate and microwave it another 30 seconds just to make sure it’s nice and uniformly cooked & firm. I always put it in the toaster before eating just to get the outsides nice and firm. It’s wonderful!

I made this recipe and split it into 2 pots. When cooled I got 5 slices from these. I topped with slices of salted butter . They were delicious. I'm going to make again and fill as I would a small sandwich for work. Its such an easy recipe to make. 😁

Made this. Followed the instructions except i split in two and made two breads. Taste was pretty good, and was nice with my bacon and eggs. Ill do it again.

Followed the recipe precisely -- except my "large" egg weighed in at 58 grams. I used a 12-ounce glass mug (better for seeing the dry ingredients get completely mixed in). Even so, the dough overflowed toward the end of the 1 minute 45 second cooking time and was still pretty wet. I added 30 seconds more, in 10-second increments (to let the dough sink back into the mug with each increment). I should have cooked some more but . . . my biscuit came out more like a pudding 🍮! 😄 Next time I will definitely use a larger mug! It's cooling now. Looking forward to how it tastes 😋
