This carnivore ground beef recipe is inspired by the flavors of Italy with deliciously melted mozzarella in every bite. This carnivore diet recipe is perfect for busy mornings, slow brunches, pic-nic lunches, afternoon snacks, and light dinners. They are loved by the whole family and particularly great for kids-packed lunches. This carnivore recipe is so easy to make and comes together in less than 30 minutes. The Italian seasoning is what really makes this dish, but if you are following a strict carnivore diet, simply omit the herbs.

This recipe uses a regular cupcake case, if you only have a larger muffin case, double the recipe quantities to yield larger frittata cups.

Enjoy snacking on them as they are, or serve several with a drizzle of sour cream and salad for a complete meal if your diet permits it.

What kind of ground beef should I use?

Try to source organic grass-fed ground beef as this meat comes from animals that have been naturally fed and raised ethically, without drugs and hormones. This type of meat will always be healthier and more nutritious especially on a limiting carnivore diet. For this recipe grass-fed 15% fat ground beef was used. However, you can use any ground beef of choice, lean 5%, 10%, 12%, 15%, or 20% fat are all great options. Feel free to experiment with other ground meats like venison, chicken, turkey, or pork and different herbs for more recipe variations, or alternatively try with shredded beef.

What kind of mozzarella should I use?

Be cautious of store-bought pre-shredded mozzarella as they are often coated with rice flour to prevent it from sticking together, so always check the labels. Source ‘block mozzarella’ not fresh mozzarella balls as there is a difference in moisture content. Typical American mozzarella is easy to grate and melts wonderfully.

How to store these ground beef frittata cups?

This recipe is best kept in an airtight container in the fridge and consumed within 4 days. Reheat in a microwave for about 20-30 seconds, or in an oven until warm.

  • Step 1

    Preheat the oven to 350°F/180°C. Coat a muffin tin with unsalted butter or ghee. Heat 1 tablespoon of unsalted butter or ghee in a frying pan set over medium heat. Add the ground beef and brown until any excess water has evaporated and the meat is relatively dry. Add the Italian seasoning, salt, and pepper and mix through. Remove from heat and set it aside.

    Shred the mozzarella on the large edge of a box grater. Spoon approximately 1 tablespoon of the beef mixture into each of the tray cavities. Top with the same amount of mozzarella.

    In a large bowl or quart-size measuring jug, whisk together the eggs, heavy cream, and water. Pour the egg mixture equally between each cavity. Give the tray a little jiggle to ensure the egg mixture has filled in all the gaps between the beef and cheese.

    Bake for 20 minutes or until the eggs are set and the edges are lightly golden. Remove from the oven and let cool slightly before removing from their casing. They can be eaten hot or cold straight from the fridge.

      Recipe as written is just ok. Italian seasoning is a bit bold. I will try it again. But change cheese to sharp cheddar, add some pepper flakes, and garlic.

                  Worcestershire sauce contains both molasses and sugar. If you’re strictly Keto anything with added sugar is a no-no.

                      I don’t eat red meat or pork so I made this with ground chicken breast in a six piece muffin pan. It was good, but a little bland. I think because of the chicken. I would like to try this again by maybe adding Turkey bacon bits for more flavor.

                      I used a 6 cup muffin pan (large). I changed the pieces from 12 to 6, but the nutrition didn’t change.
