  • Step 1

    To a bowl, add hemp seeds, chia seeds, powdered allulose, and vanilla extract. Mix, then whisk in the almond milk, heavy cream, and ½ tbsp of peanut butter. Divide the mixture into 2 jars or glasses.

    Add the chocolate and coconut oil into a bowl, and the remaining peanut butter into another bowl. Microwave them both in 20 second intervals until melted. You can also melt them in a double boiler.

    Divide the melted peanut butter over the jars of “oats” and spread it evenly. Place the jars in the freezer for 30 seconds to set the peanut butter. Divide the chocolate over the peanut butter layer and spread until the edges.

    Place the jars in the freezer for a few minutes until the chocolate sets. Cover the jars loosely with cling film and place in the fridge for 2-3 hours or overnight. Sprinkle with flaky salt and serve!

    Is there anything that could sub out the peanut butter in this recipe please, as not a peanut butter fan

      You could use almond butter or leave it out completely. I didn’t add peanut butter to the “oats” portion and it was fine.

      I did not have hemp or flax seeds, which would have the best sub, so I used coconut flour. The “oats” thickened up really fast, faster than I expected. I’m eating it right now for breakfast and it’s tasty. I especially like the chocolate shell and slight saltiness. I’ll try it again once I can get a bag of hemp seeds.
