Ingredients
Bacon
2 slice - 6" long
Zucchini
1 large
Garlic
1 clove
Chives, Raw
1 tablespoon
Cheddar Cheese
½ cup, grated
Olive Oil
½ tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Peel the skin from the zucchini and discard. Peel the flesh into long ribbons.Step 2
Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp. Remove the bacon from the pan, leaving the bacon fat in the skillet. Set aside.Step 3
Crush the garlic and add to the skillet with the bacon fat and add the zucchini ribbons. Cook for 3-4 minutes or until tender.Step 4
Remove the skillet from the heat. Finely chop the chives and add to the skillet along with the cheese, salt and pepper. Stir through the zucchini spaghetti to combine.Step 5
Crumble over the cooked bacon to serve.
