Step 1
To a large skillet over high heat, add the oil. Once the oil heats, add the ground beef and let it cook for 3-4 minutes without stirring. Once the beef browns, finely chop the onions, celery, and garlic and add them to the beef.Step 2
Cook for another 3-4 minutes until the beef is cooked through and the vegetables are fragrant. Transfer the meat mixture to the crockpot. Chop the mushrooms and add them in.Step 3
Add the tomato paste, mustard, broth, cream cheese, smoked paprika, salt, and pepper. Stir well. Cook on low for 4-5 hours or on low for 2-3 hoursStep 4
When the soup is ready, add the cheddar cheese. Stir until it melts completely. Taste and adjust seasoning if needed.Step 5
Divide the soup into 4 bowls. Garnish with a little more grated cheddar, sliced pickles, chopped tomatoes, and sliced green onions. Serve immediately.
