  • Step 1

    Add the riced cauliflower to a frying pan with a teaspoon of water. Fry gently until soft – about 3 minutes. Reserve to one side.

    Finely dice the tomato, cucumber and scallion and add to a mixing bowl with 1 tablespoon of chopped cilantro. Season and toss to combine.

    Add the coconut yoghurt to a mixing bowl with the paprika, garlic powder and 1 teaspoon of lime juice. Stir well to combine.

    Dice the avocado and add to a bowl. Add the cauliflower rice, and the tomato and cucumber salsa. Season all with a little salt and pepper and drizzle with the juice of the remaining lime and the olive oil.

    Top the bowl with the coconut yoghurt and scatter with the pumpkin seeds. Add an additional wedge of lime to serve.

    Who the heck is going to have access to Coyo yogurt outside of Australia or NZ? The unsweetened yogurt in the USA tastes horrible and has over 10 grams of carbs a serving. Make more accesible recipes, especially for paying members! HINT: Add recipes that anyone in the world can make and show recipes that are easy to make with ingredients most people have.

    Could I use coconut cream in place of yoghurt? Can't find yoghurt without a ton of sugar in UK 😱

        WOW! Outstanding flavors and filling. Made a great lunch! I substituted plain Greek yogurt for the Coconut yogurt as that's what I had on hand, so mine was Vegetarian. That probably upped the carbs a little but shouldn't be significant. I will definitely make this again!

          Love it, my favorite flavors and textures and it’s the perfect seasoning. It was hard getting rid of my grains on keto but this is a perfect replacement for rice or quinoa.

            What about substituting olive oil for sesame seed oil!? Has anyone tried this?

              The recipe calls for Olive oil...but I bet sesame would give it a better Asian feel. I would try it for sure and saute the cauli rice in it!
