Tips for the perfect dessert

  • Step 1

    Cream room temperature butter in a stand mixer fitted with a paddle attachment. Once the butter is soft and creamy, add your brown sugar substitute, vanilla extract, and liquid stevia drops to the bowl. Blend the ingredients together until the sweetener dissolves and you’re left with a pale brown, creamy mixture.

    Combine almond flour, coconut flour, and the first amount of Keto chocolate chips together in a small bowl, then add the ingredients to your stand mixer. Blend the ingredients at a low speed until you have creamy cookie dough. Since there are no eggs in the dough, you can taste the dough and add more sweetener as you feel necessary.

    Put the cookie dough in your refrigerator for at least 20 minutes for it to chill and firm up. After 20 minutes, line a sheet tray with parchment paper and pull your cookie dough from the fridge. Shape 1-tablespoon portions into flat football shapes on the tray. Take your time and use your fingers to smooth the edges out to get the right shape.

    Place the tray of cookie dough footballs in your freezer for 30 minutes. When the time is almost up, create a double boiler on your stove to melt the second amount of chocolate chips listed. Add the second amount of chocolate chips and the heavy cream measured in volume to the bowl in your double boiler. Make sure there is at least 1-inch of water in the bottom of your double boiler to melt the chocolate and cream together at low heat. Use a rubber spatula to continually stir the chocolate until it melts and comes together in a chocolate sauce.

    Remove the bowl of chocolate sauce from the stove and set it on a potholder to cool. Continually stir the chocolate to help it cool down. When the cookie dough footballs are ready, use a fork or a baker’s dipping fork to dip the footballs in the chocolate one by one. Use a butter knife to release the footballs from your fork back onto the lined sheet tray to cool.

    Return the chocolate-dipped footballs to your refrigerator to cool down. Once the chocolate is set, you can serve them. Keep the dessert cold until you’re ready to eat it.
