    To a large bowl, add the room temperature cream cheese and butter. Beat using a hand mixer until the mixture is creamy. Set the bowl aside.

    To another bowl, add the heavy cream. Whisk until it reaches stiff peaks. Add it to the cream cheese and butter mixture.

    Add the powdered erythritol, lemon zest, and vanilla extract. Whisk until all the ingredients are incorporated. Line a mini cupcake pan/silicone mold with paper liners.

    Nice idea! Could imagine this would be wonderful for a birthday party or hen night treat. I used raspberries and put crushed almonds on the base as a very thin "crust".
