Low Carb Sausages with Smoky Onion Gravy

This Keto sausage recipe makes a delicious low carb dinner option, packed with flavor from a rich and smoky gravy. Our Keto recipe is prepared with pork sausages, tender red onion, tomato paste, smoky paprika, a little garlic powder, aromatic fresh rosemary, chicken stock, and a touch of xanthan gum. Perfect for serving over cauliflower rice, with braised cabbage, or with a low carb vegetable mash.

Do I Have to Use Xanthan Gum?

Xanthan gum is a great gluten free, low carb thickener that can transform liquids into thickened sauces. We have added just a 1/2 teaspoon of xanthan gum to our recipe. This is enough to thicken the sauce and create a glossy and smooth gravy. If you do not wish to use the gum, you can omit this and serve the sausages with the pan sauce. It will however, not be as thick and rich and will have a much more liquid consistency.

What Kind of Sausages Can I Use?

We have used plain pork sausage links for our Keto dinner recipe. You may use any kind of sausage that you prefer, plain or seasoned. You can also use an alternative protein if desired, such as chicken, turkey, or even lamb sausages. Please be sure to adjust your macros and cooking times accordingly to account for any changes made in the ingredients used.

  • Step 1

    Heat the olive oil in a skillet over a medium heat. Add the sausages to the skillet. Pan-fry the sausages until cooked through, no longer pink inside and browned all over. Set aside and keep warm while you prepare the gravy.

    Thinly slice the onion. Add the onion to the skillet used to cook the sausages. Sweat gently over a low heat for a few minutes until tender and fragrant.

    Add the paprika, tomato paste, salt, pepper and garlic powder to the skillet. Finely chop the rosemary and add to the pan. Stir well to combine and heat through for a minute.

    Add the chicken stock to the skillet and bring to a boil. Stir well. Reduce to a simmer and sprinkle over the xanthan gum. Stir the gum into the gravy to dissolve. Simmer for a few minutes to thicken and reduce the gravy to your preferred consistency.

    Remove the skillet from the heat. Stir the cooked sausages into the gravy, so they are well coated. Serve hot with your preferred Keto sides.
