It can be filled with all kinds of toppings like diced jalapenos, sour cream, greens, and so forth. Once the cheese cools down, it crisps up like a taco! You will love the crispy texture of the cheese shell with the soft egg on the inside. This Keto breakfast is quick and easy for everyday breakfasts.

What kind of cheese to use?

Please use a slice of cheese wrap as it is cut perfectly thin and is the right diameter for a taco. If you do not have cheese wraps, feel free to use shredded cheese. If using shredded cheese, you will need to mound it up, spread it out into an even layer quickly, and then top it with the egg.

What kind of toppings/fillings can I use?

This recipe uses diced jalapenos, sour cream, Chihuahua cheese, and mixed greens. However, you can use diced tomatoes, salsa, hot sauce, other Mexican cheeses like cotija.

Can I make these ahead of time?

No, the cheese will not stay crispy if the egg and cheese shell is made ahead of time.

  • Step 1

    Place a medium-sized nonstick skillet over medium heat. You do not need to wait for the pan to get hot. Place a piece of cheese into the cold pan.

    Immediately crack one egg on top of the cheese wrap. If the egg begins to slide, tilt the pan to hold the egg in the center of the cheese wrap for a few seconds to allow it to cook slightly. Then you can tilt the pan back down. Cover the skillet with a fitting lid. Turn the heat down to low if necessary to prevent burning. Cook the egg to your desired doneness. For an egg with a runny yolk, cook for approximately 1-2 minutes. Once the egg is cooked, how you like it, remove the lid.

    Gently scoop around the crispy cheese shell very carefully. It is still hot at this point and will break easily. Remove the pan from the stove. Removing the egg and cheese from the heat source will allow the cheese to begin to firm up. Gently use a rubber spatula to get under the cheese and fold it over the egg into a taco shape. Then slide the shell and egg onto a plate.

    Fill the taco with the diced jalapenos (if using), shredded cheese, thinly sliced avocados, and lettuce. Feel free to add other Keto-friendly toppings. Serve immediately!
