Keto Italian Grinder Pinwheel Sandwiches

Layers of salami, provolone cheese, turkey, and ham make up these Keto pinwheel sandwiches. Inside the pinwheel sandwiches are tomato, banana pepper rings, and a special Italian grinder lettuce filling. Instead of using Italian dressing, which might have added sugar or unhealthy oils, you’ll make your own Italian marinade that coats the lettuce going into your grinder pinwheels. Each pinwheel can be eaten in about two bites; and each bite is filled with meat, cheese, a little peppery spice, fresh lettuce, and a tangy mayonnaise dressing. Each serving is just one piece, so add as many as you’re eating to your food log on Carb Manager for accurate macros.

    In the bottom of a small mixing bowl, whisk together mayonnaise, extra virgin olive oil, white wine vinegar, salt, pepper, lemon pepper, and garlic powder. Add shredded lettuce to the bowl, and fold the ingredients over until the lettuce is coated. Leave the bowl aside so the lettuce can marinate for a few minutes.

    On a clean, flat surface arrange slices of salami in a rectangle, having them slightly overlap each other. Follow in the same style with slices of provolone cheese and then large slices of turkey and ham. You can rearrange the meats and cheese in any order that will work best for you to ensure you can roll up the pinwheels for slicing later.

    Slice a roma tomato very thin, then arrange the slices in a row on one side of your layers of meat and cheese. Arrange jarred banana pepper rings across the tomato. Then, grab your lettuce mixture and pile it on top of the tomato and peppers in a row.

    Very carefully, start rolling the meats over the veggies into a tight roll. Keep rolling the meat up until you have a long roll similar to sushi. Use a sharp knife to slice off any messy ends on the roll, then cut the roll into pinwheels. Each roll should make approximately 12 pinwheels.
