Step 1
Preheat the oven to 200°C (400°F). Grease a baking dish with butter and set it aside. Rinse and pat dry the chicken breast. Place them on a large cutting board. Slice the chicken breasts until 0.6cm (1/4 inch) thick.Step 2
Shred the mozzarella cheese. Season each piece with salt and black pepper on both sides. Place a tablespoon of goat cheese on one end of each piece of chicken. Top an entire piece of chicken breast with shredded mozzarella.Step 3
Carefully roll up, starting at the cheese-topped end. Tightly each piece with prosciutto and place them in the prepared baking dish. Bake for 25 minutes or until cooked through.Step 4
When done, remove them from the oven and transfer them to serving plates. Optionally, garnish with some freshly chopped parsley and serve immediately. Enjoy!
