  • Step 1

    Arrange the chicken thighs in the base of the crockpot.

    Thinly slice the onion and garlic and scatter over the chicken.

    Add the passata, syrup, vinegar, cumin, paprika, mustard powder, salt and pepper to a mixing bowl. Stir well to combine.

    Pour the tomato sauce over the chicken thighs and stir to coat. Place the lid on the crockpot and cook on high for two hours until the chicken is cooked through.

    Mine took 3 hours to cook. Really great flavor, made with tomato purée. Also made Spanish cauliflower rice, omitted carrots, also onions because they’re cooked with the chicken. Added 1/2 cup of Rotel fire roasted tomatoes & chilies to the rice! Delicious! Even Hubby likes it!

      This is currently cooking in my brand new crockpot. Has been in for 2 and a half hours on high, nowhere near cooked. Advice?

      A question about the recipe and nutrition info - it specifies skinless chicken but are the thighs also boneless? The 4 thighs I bought (and cooked) weighed considerably more than the recipe calls for. Does the quantity given represent only meat?

        Okay. So I'm pretty well established as "inept in the kitchen" -- this recipe is just WOW! Super easy and way beyond delicious! Seriously, if I could've gotten my face down into the pot, I would've lapped up every last bit of that sauce! Only one little nit to pick -- it would've been helpful to know on the first trip to the store that passata is also known (at least, here in USA) as strained tomatoes. Never heard of it before, by either name. But now that I know about it, I'll be using it a lot! And making this dish a lot!

          I’m glad you mentioned about the passata! I did some further investigating. Thus is what I discovered. Tomato sauce and tomato paste are cooked products, which instantly makes them different from passata. In addition, tomato sauce often has other ingredients such as carrots, onions, and garlic, while tomato paste is cooked down to be extra concentrated and thick. You would not want to substitute either product if passata is called for in your recipe. If you cannot find it in your store, the best substitution is tomato purée or take plain canned tomatoes and run them through a sieve or a food mill..
