How to customize this recipe?

Everybody loves pizza, but we all have our own preferred toppings. This recipe utilizes high-fiber, low-carb vegetables like zucchini and mushroom to transform this skillet recipe it a well-rounded meal. You can swap them for eggplant, spaghetti squash, brussels sprouts, cabbage, etc. For the protein, we have used Italian sausage and pepperoni, but you can swap them for ground beef, chorizo, bacon, and deli meat. As for the cheese, you can replace the mozzarella with cheddar, provolone, parmesan, or Mexican blend.

What if you don’t have a skillet?

One-pot meals are a blessing because of the minimal dirty dishes they leave behind. However, if you don’t have an oven-safe skillet, you can cook in a regular nonstick pan and then transfer everything to a casserole dish. Top with the cheese and pepperoni, and broil for a few minutes.

  • Step 1

    Dice the onion, pepper, and zucchini, and slice the mushrooms. Heat a large, deep skillet over medium heat. Brown the meat and drain off any grease, reserving 1 tbsp in the skillet. Transfer the meat to a plate.

    Add the onion, pepper, mushrooms, and zucchini and saute for 3-4 minutes. Add the salt, pepper, marinara sauce, and cooked meat. Top with the grated cheese and pepperoni slices, then bring to a boil.

    Broil for 2-3 minutes in your oven until the cheese is bubbly. Serve immediately with your favorite sides.

    The cheese, marinara, and pepperoni dress the dish as a pizza, but in reality, this is a casserole.

      I agree but in fairness, it doesn't say pizza, it's called pizza skillet. A "skillet" recipe is a type of casserole (typically a one dish meal that at least starts on the stove top).

    So easy. So delicious. I used half ground beef and half hot Italian sausage and I used Rao spaghetti sauce. Also, I added more pepperoni than the 10 called for in the recipe. I just made concentric circles over the top of the whole dish. Otherwise I followed this recipe as written. I was skeptical about the zucchini affecting the authenticity of a pizza dish but I had one on hand so I used it and it was really quite good in this dish. I'm actually not a huge fan of pizza but of course when you can't have it, you want it and this definitely fit the bill. The salty crispy pepperonis on top really gave it a true pizza like finish. If you are jonesing for pizza this is definitely the dish for you. Furthermore, the portions are generous. The recipe makes four servings and I made it in a standard cast iron skillet so one serving gives you a quarter of the skillet. Will definitely make again whether I'm jonesing for pizza or not.
