What is aligot?

Known fully as pommes aligot, it is a classic, rich, creamy French side dish made from potatoes, cheese, and crème fraiche. It is a dish that transforms simple ingredients into a silky and smooth work of art. Traditionally, aligot is made with Tomme de Laguiole or Tomme d’Auvergne cheese, however, for the home cook, a good quality sharp cheddar cheese and mozzarella cheese are good substitutes. Traditionally, aligot is said to have been created in Southwest France by monks serving hungry pilgrims. Today, aligot is particularly famous for Thanksgiving, Christmas, or almost any festive holiday.

Traditional aligot is known to be a dish that does not refrigerate or freeze well.     Mince the garlic, cut the cauliflower into small florets and the stems into small pieces. Place the cauliflower in a microwave-safe container and steam for about 7 minutes. The cauliflower should be very soft and almost falling apart.

    Transfer the cauliflower along with shredded cheese, butter, cream, salt, black pepper, and minced garlic into a food processor or blender. Blend until the mixture is smooth, silky, and fluffy in texture for 1-2 minutes depending on the strength of your blender. Ensure to scrape down the sides of the food processor as you blend.

    Immediately serve the aligot on a serving plate and garnish with chopped parsley. This dish is best enjoyed warm and fresh.
