Keto Maple Pork Rind Breakfast Cereal

5 ratings

This Keto pork rinds cereal is both sweet and salty, perfect topped with ice cold plant milk. Our easy Keto cereal is simple to prepare on the stove and just requires a little cooling time before serving. This makes a great midweek breakfast option.

Keto Pork Rinds Cereal Ingredients

This Keto breakfast cereal combines crunchy pork rinds with toasted pecans and pumpkin seeds. The rinds, nuts and seeds are gently warmed on the stove in a blend of coconut oil, maple flavored syrup and cinnamon, before being cooled to set and firm. Once chilled the cereal is ready to be topped with your favorite plant based milk if desired.

Serving Suggestions

This Keto breakfast cereal is perfect served as you would a classic cereal - topped with cold milk. However this also makes an excellent trail mix option. Ideal when you are short on time and need breakfast to grab and go. If you are serving your cereal with milk, be sure to factor this into your macros.

Add the coconut oil, maple flavored syrup and cinnamon to a large skillet. Set over a low/medium heat. Stir to combine, heating until the oil has melted.
    Step 1
  • Step 2

Roughly chop the pecans and add to the skillet along with the pumpkin seeds. Stir to combine, coating the nuts and seeds in the oil and syrup mixture. Toast gently for a minute.
    Step 2
  • Step 3

Roughly break the pork rinds into small bite sized chunks. Add the rinds to the skillet and stir well to combine. Make sure the nuts, seeds and rinds are all evenly coated in the syrup and seasonings. The syrup will bubble a little and start to caramelize.
    Step 3
  • Step 4

Transfer the cereal to a plate and set aside to cool completely - this won’t take long. As the mixture cools the syrup will start to solidify. Once cooled, break apart any large clumps. Divide between two serving bowls and top with your favorite plant based milk if desired.

Loved it so doubled the recipe to keep on hand but lost all its crispness by next day. Best to make when it you want it.

Loved it. I added 1 Tbl of Bob's Red Mill shredded unsweetened coconut, 0.3 gm net carbs, 33 calories. I often have hard time meeting calorie budget by 200-300 calories. Poured 2 Tbl HWC over my serving.
