Coffee cake is so delicious and it is made even more delicious by the fact you can whip one up in less than 6 minutes! The trick is to use softened or melted butter to be sure it is all incorporated before cooking in the microwave. Feel free to swap out the almond flour for coconut flour if you have a sensitivity!

Recipe Steps

  • Step 1

    Combine almond flour, baking powder, sweetener, water, vanilla, 2 t softened butter and a pinch of salt together in a ramekin or mug that has been sprayed with coconut oil cooking spray. Stir together until well mixed, then smooth the top.

    In another small bowl, combine cinnamon, alternative brown sugar sweetener, 1 t softened butter, a pinch of salt and 1 t coconut flour. Combine until crumbly, then sprinkle on top of cake batter in the ramekin.

    Microwave for 45 seconds to 1 minute. Let stand for 1 minute before eating, if you can wait that long!

    Left the receipe basically intact, added a med egg and a heaping teaspoon of physullium husk. Was actually very good.

          My first CM premium recipe experience. Should have read the comments before making the recipe. I’ve got a sweet tooth and quite enjoy low carb desserts after a meal. But this was way too sweet. I’d cut the sweeteners by half the next time around. Can turn this into a more enjoyable recipe with small tweaks. As the other comments mentioned an egg could give it a more cakey form. And yes, too much butter. With half the amount of sweeteners, a whole egg or egg white of an egg and some nut based toppings, we’ve got some high potential here. Not giving up on this one quite yet.

            My first Keto mug cake and I loved it! After reading other users’ reviews, I used half the granulated sweetener, added a medium egg and about two teaspoons of finely chopped pecans to the batter. Then sprinkled a half teaspoon of pecans on top of the brown sugar topping, Nuked it for about :55, and it’s delicious. Thanks!

              Add an egg, a little less granular Swerve sugar, cooked for a minute and 20 seconds. Yum!

                This is terrible! Way too much sugar and with no egg, it's just flour mush. It might be better with an egg and half the sugar and butter.

                        Coffee cake is a cake you eat with coffee. Doesn't actually contain coffee..

                      There is no egg in recipe. I believe an over site as it turned into hot mush not a cake. Terrible

                        We loved it! Double the recipe and only used 1 egg. Will try 2 next time. Added a few hickory nuts and Lily's chocolate chips on top on the batter. Substituted melted coconut oil for the butter and enjoyed it! Thanks for the recipe!

                          Oh good lord. Mine turned out more like cream of wheat, which I LOVE!! Amazing. I think I added too much butter. Oops.

                            Taste was great but it didn’t set up. Will try it with an egg next time. Also like the persons idea to add nuts! Can’t wait to try it again. Think I will make little packets with ingredients for fast morning prep!

                              Love this recipe, I tripled the recipe, and added 2 beaten large eggs. Used 3 mugs and baked each for 1 min in the microwave.....delicious

                                  I love the recipe. So yummy. I do wonder how it’s only 3 net carbs though. Only 2 Tb of my almond flour (Bob’s superfine) is 4 net carbs. Is there a lower carb almond flour out there? Please share the brand!

                                    Have you subtracted the amount of fiber from the total carbs? That’s what gets you your net carbs. When counting carbs you subtract sugar alcohols grams and fiber grams from the total count of carbs to get your net carbs. Net carbs are the only carbs your body can process so the others do not matter.

                                  This was awesome! I did take the advice of others and added an egg. Also I put everything in one ramekin. Also I didn’t have the brown sugar but felt it was sweet enough with the 1 tbsp of Swerve. Will definitely make this again!

                                      Is the cake supposed to be cooked first then the topping go on? It was just gooey.
