Step 1
Preheat an oven to 400 degrees. Break cauliflower florets up into medium-sized chunks. Toss the florets in a mixing bowl with the cream, salt, pepper, onion powder, and garlic powder. Toss continually until the cream is completely coating the cauliflower.Step 2
In a food processor, pulse the pork rinds untils you have a fine, crumbly breading. Arrange the pork rind breading on a plate.Step 3
One by one, shake excess cream off the cauliflower florets and press in the pork rinds. Roll the florets to pick up the breading and arrange on a sheet tray lined with parchment paper. The florets do not have to be entirely coated in breading - maybe 50%-75% coated.Step 4
Bake the tray for 30 minutes, gently flipping the breaded cauliflower over halfway through.
