  • Parmesan Cheese

    ¼ cup, grated

  • Black Pepper

  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Finely chop the tomatoes and add to a mixing bowl with the Parmesan, basil, pine nuts and pepper. Mix well to combine.

    Slice across the side of the chicken breasts to create a pocket, taking care not to cut all the way through.

    Divide the Parmesan mixture evenly between the two chicken breasts, packing the mixture in tightly.

    Seal the chicken breasts together and wrap each with two strips of bacon to secure the filling inside.

    Transfer to the oven to bake for 23-25 minutes or until completely cooked through and golden brown.

    I modified this by exchanging the sun dried tomatoes with roasted red bell peppers. Topped each piece of baked chicken with mixed greens and drizzled it with Meyer lemon vinaigrette. Outstanding lighter version of chicken parmesan. Roasted asparagus with hollandaise. Keeper! I would also make this for company. Very easy to make.
