Ingredients
Sweet Mini Peppers by Tesco
2-½ ounce
Raw Egg
2 large
Salt
¼ teaspoon
Black Pepper
½ teaspoon
Crushed Red Pepper by Simply Organic
¼ tsp
Olive Oil
2 teaspoon
Bacon
2 slice - 6" long
Sharp Cheddar
¼ cup, shredded

Step 1
Preheat an oven to 350 degrees. Spray an oven-safe baking dish with pan spray. Prepare the mini sweet peppers by cutting off the tops. Cut each pepper in half, and remove any seeds. Arrange the peppers in the baking dish.Step 2
In a bowl, whisk together the eggs, salt, pepper, and red pepper.Step 3
Heat the olive oil in a medium pan. Cook the eggs on medium heat, continually stirring the eggs until they scramble to your preferred doneness. You may want to under-cook your eggs slightly, since they will cook more in the oven.Step 4
Scoop the scrambled eggs over the peppers in the baking dish. Cook the two strips of bacon in the same pan as before until the bacon is crispy. Once the bacon is cooked, chop it into bacon bits.Step 5
Sprinkle the bacon bits over the sweet peppers. Sprinkle the shredded cheddar cheese on top as well.Step 6
Cook the dish, uncovered, in the oven for 10 minutes. The cheese should melt and turn slightly golden brown.

The peppers were undercooked, so next time i would put the peppers in the oven while I cook the eggs and bacon. Maybe they would be softer then.

Satisfying! I cooked the egg in the microwave just a bit and used cooked bacon bits, I then put it together according to recipe and used my Ninja air fryer to bake. Loved how it browned the cheese. Delicious!

This was amazing. It tasted like pizza to me. All it needed was pepperoni and mushrooms and would make for a great dinner! Definitely be having this once a week.

I guess I'm not much of a peppers person in the morning. I would have preferred it as an omelet with fewer peppers and with onions.

This recipe is delicious! I made in the microwave, except for the eggs, as recommended by the reviewer below. I’ll definitely make again! It’s fast, easy, and satisfying.

I microwaved the peppers for about 4 minutes while I was making the scrambled eggs on the stove. Then I microwaved the bacon. When the eggs were done, I put them on top of the peppers, crumbled up the bacon and sprinkled it on top, then spread cheddar cheese on top. I microwaved the whole thing for 1 minute. It was great, and ready in about 7 minutes total!

Yes, half the original recipe here is 1 serving. You can also go by weight, which is about 92g per serving.

I bought fresh mini peppers from the produce department. Is that correct or was I supposed to find these jarred? Any tips for using the fresh peppers if I've messed this up already! :)

You were exactly right in your choice! Fresh peppers will be more stable for holding the filling as well.
