    ½ medium - 2 1/2" diameter

  • Step 1

    Heat the oil in a large saucepan over a medium heat and add the pancetta. Cook through until golden and crisp. Remove the pancetta from the pan with a slotted spoon and set to one side.

    Dice the cauliflower florets into bite sized chunks and thinly slice the onion and garlic. Add to the pan with the pancetta fat and pan fry for a few minutes to soften the onion.

    Add the stock and bring to a gentle boil. Simmer for 5-6 minutes or until the cauliflower is fork tender.

    Transfer to a blender or use a hand held stick blender to process until smooth.

    Add a half tablespoon of ricotta to each bowl to serve, allowing it to melt into the soup and top with a scattering of crispy pancetta.

    Very good. Made some adjustments. Used turkey broth, cream instead of cottage cheese, bacon since didn’t have any pancetta, after blending added about a teaspoon of fresh chopped parsley and a 1/2 cup of baby chard leaves from the garden. Served with leftover fried turkey on the side.

      I sprinkled some xanthum gum in while cooking... it helped thicken. Salt/pepper to taste.. I omitted the ricotta because the store was out of full fat ricotta (COVID... grrr) but sprinkled some Parmesan on top! Sooo so good!

        Hi just wondering how you figured out the serving size for the recipe. Says 1g but I feel like I’m reading it wrong maybe, I’m new to this app and keto. I want to make this recipe but just want to know how much I can eat per serving in grams?

      Very good added tablespoon of shredded sharp cheese to top it off and used Prosciutto in stead of pancetta will make again. Yum

        Quite tasty. Recommend adding pepper and salt to taste. A little less liquid would make it thicker/creamier. Will make again!
