  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Quarter the mushrooms and slice the zucchini in half lengthwise, then into half inch wide slices. Add to a small oven proof dish.

    Drizzle the olive oil over the vegetables then sprinkle over the herbs, spices, lemon zest, salt and pepper. Use your hands to rub the seasonings into the vegetables. Transfer to the oven to bake for 20 minutes turning halfway through until golden and tender.

    Recipe is very good, but the yield seems way off. I was only able to get 2 whole servings of 2.5 oz with about 1.2 oz left. So decided to up my serving size

      I made this tonight (with a full package of button mushrooms, I think 6 oz?) and just paprika for seasoning, and added some butter because surely more mushrooms meant it wanted some more fat, right? And it was delicious with some fried eggs on top. I will totally make this again and vary the seasonings according to the rest of my meal -- thinking curry or berbere might be great with something like coconut-crusted chicken or crispy baked chicken thighs.
