Cucumber

Capers

Lemon Juice

Avocado

Shrimp, Cooked From Fresh

Add the arugula and spinach to a salad bowl.Step 2
Dice the cucumber and roughly chop the capers, add to the bowl and toss to combine.Step 3
Dice the avocado and add to the bowl along with the shrimp. Drizzle over the olive oil and toss to combine.Step 4
Mix together the mayonnaise, lemon juice, finely chopped chives, salt and pepper until well combined.Step 5
Top the salad with the mayonnaise to serve.

I liked the simple prep, and the avocado and cucumber pairing. Would add more capers next time. My husband said he'd eat it again with a different salad dressing. We like a fresh balsamic vinaigrette. Thanks for the recipe. It was quick, clean and easy on a hot summer night.
