The tater tots are perfectly bite-sized and make great finger food. Eat them as a snack or include them as a side dish to your meal. You can even refrigerate the leftovers, so you can use these Keto tater tots in your meal prepping. They bake to a golden brown: crisp on the outside and tender on the inside. Are tater tots Keto?
Traditional tater tots are made with potatoes, hence the ‘tater’ in ‘tater tots’. This style is definitely not Keto, but these Keto tater tots are made with cauliflower. You’ll be surprised how much cauliflower tastes like potatoes when they’re prepared right! These tater tots will be significantly lower in carbs than what you would buy in a store.
What is nutritional yeast?
Nutritional yeast is not activated or ‘alive’ like the yeast in bread and other fermented foods. Sprinkle the flaky substance on your meals or add it to your cooking for extra B vitamins. Nutritional yeast also has a unique and wonderful ‘cheesy’ flavor without any cheese or dairy included at all. This ingredient is fairly popular, so many grocery stores carry it on their shelves.
Do I need to use pork rinds?
If you want to make these tater tots vegetarian, you can substitute the ground pork rinds with some veggie-friendly alternatives, such as almond flour or ground flaxseed. Any of these three ingredients act as a filler and binder in the tater tots, which helps keep them from falling apart. The shredded cheddar in the recipe is also used for similar reasons.

Chop raw cauliflower into large pieces and add them to a big pot. Fill the pot with water and bring to a boil on the stove. Boil the cauliflower for about 10 minutes or until it’s soft through the core. Use a pair of tongs to transfer the cauliflower to a blender or food processor. Blend the cauliflower while it’s hot until smooth.Step 2
Blend salt, pepper, garlic powder, and nutritional yeast into the cauliflower. Transfer the seasoned cauliflower to a large mixing bowl, and stir the mixture to release steam and cool it down. Wait for the cauliflower to cool (about 15 minutes), then stir the ground pork rinds and shredded cheddar into the mixture. You may need to grind a bag of pork rings in a blender before measuring the amount you need.Step 3
Turn on an oven to preheat to 350 F (180 C), and line a large baking sheet with parchment paper. Scoop tater tots in 2-tablespoon portions from your mixing bowl. Arrange all the scooped tater tots on the lined baking sheet. Then, bake the tater tots for 30 minutes. They’ll need to cool for 10 minutes before they’re removed from the tray.
