  • Step 1

    Finely dice the onion and thinly slice the garlic. Heat the coconut oil in a pan over a low/medium heat and fry the onion and garlic until tender.

    Add the curry powder, ginger, turmeric, cumin and cinnamon to the pan. Swirl the pan, coating the onion and garlic in the seasoning, warming the spices through.

    Add the beans to the pan and season with black pepper. Toss the beans in the spices and oil.

    Add the coconut milk to the pan and bring to a gentle simmer, cooking the beans until the milk has reduced and the beans are tender – about 5-6 minutes.

    Scatter with flaked almonds to serve.
